China’s crayfish industry has seen prices tumble due to a glut in supply during peak harvest season in May 2022. A popular delicacy, crayfish is commonly referred to in China as “little lobsters”. Daily sales of crayfish from surrounding areas in the northwestern city of Xuzhou – a major crayfish producer – can reach about 10,000kg (22,000lbs), according to a local trade promotion body in the city.
